I’m currently missing Italy right now so that’s why I had to make a calzone this week! This calzone was inspired by my favorite calzone from Puccini’s called, “Meatball Heaven.” Its super simple yet so tasty. It features hunks of meatball, mushrooms and a whole lotta Gorgonzola cheese.

Ingredients:

1 lb of mild Italian sausage
1 can of pizza dough
1 can of parmesan or italian style cheese
1 jar of pizza sauce
4 large mushrooms
1 container of Gorgonzola cheese
basil, fresh or dried

First thing to do is to brown your sausage in a pan over medium heat for about 15-20 minutes. Slice and sautée your mushrooms. When the sausage is about done open your can of pizza dough and roll it out on a flat surface. I have yet to master rolling out dough. I almost always rip it. To help avoid having the dough stick I sprinkle a little flour on the surface before rolling it out.

Next, put a layer of pizza sauce over the dough. Add your crumbled sausage and mushrooms on next. Add the Gorgonzola and parmesan/italian cheese on top. Note: cut the dough in half.

Now for the hardest part. Fold the sides of your dough so they meet in the center to where they overlap a little. Fold each end and firmly press into dough. Sprinkle with basil and place in oven for 14-18 minutes at 400 degrees.

Sprinkle with Italian grated cheese before serving.
